#rona might be preventing us from traveling right now, but we can still explore the world…right in our kitchens. Whilearmchair adventureis a sure proof way to live vicariously through others, cuisine is another way to feel like you’re somewhere far away. Here are two of my favorite recipes from around the world:
Ropa Vieja, Cuba
This traditional Cuban dish has a fascinating story behind it: legend has it, there once was a poor shepherd who struggled to feed his family. One night, he had nothing to put on the table, and in a moment of desperation, he threw his old rags into a pot and prayed for a miracle. Overnight, the old rags turned into a delicious stew.Ropa viejaliterally means “old clothes” in Spanish, but it tastes delicious! You’ll need:
- flank steak or brisket
- chopped onion, bell pepper, and tomato
- cilantro
- salt
- white wine
Cook the meat in a pan for 6-9 minutes, then put in a pot with the tomatoes and salt and cook on low heat for 3-4 hours until it’s tender. Shred or pull the meat apart into thin strands; cook the veggies in olive oil for 5-6 minutes, add a little wine. Pour the veggies over the meat, add cilantro, and serve with fried plantains or black rice.
Potato Pancakes, Lithuania
Weird but good and delicious one: potato pancakes! They’re good on their own or as a side dish, especially with salmon, and they’re quick and easy to make. You’ll need:
- 5 large potatoes
- 1 egg
- 3 tablespoons of flour
- a little cooking oil
- salt and pepper
- sour cream
Peel the potatoes and stick them in a blender; add egg, flour, and salt. Pre-heat a pan, use a tablespoon to pour the mass into the pan and form pancakes. Cook for 1-2 minutes on each side. Add a little shredded garlic for a bit of a kick; once the pancakes are ready, top with sour cream and a little bit of pepper.
