A few simple, easy to find ingredients are transformed by the smoky flavour of sweet Hungarian paprika. This one spice elevates a dish to the next level, meaning you don’t need much to create a winning meal on the road.
Ingredients:
300g chicken thigh
1小红洋葱去皮nd sliced
3 cloves garlic, peeled, sliced
1 tub cherry tomatoes, halved
2 teaspoons sweet paprika
½ teaspoon dried thyme
1 can cannellini beans, drained
Sour cream to serve (optional)
Method:
- Heat a fry pan over medium-high heat with a drizzle of oil. Season chicken well with 1 teaspoon of paprika, salt and pepper. Add to pan and cook for 3-4 minutes or until well browned. Turn chicken and cook for 1 minute. Remove and set aside.
- Return pan to heat, add more oil if needed and cook onion and garlic for 2 minutes or until softened slightly. Add remaining paprika, thyme and tomatoes to the pan and cook for 1 minute before add beans and ½ cup of water. Return chicken to the pan and cook on low heat for 5-6 minutes, or until cooked through. Add more water if necessary.
- Divide beans and sauce between plates, top with chicken and serve

TIPS:
- If using chicken breast, be careful not to overcook as it will be dry
- Loosely covering the pan will help to cook the chicken all the way through in step 2
- Serve with toasted olive oil and garlic bread on the side to mop up all the juices
SUBSTITUTES:
- Whilst this is a complete meal, if you wish it can be served over a side of rice
- Chickpeas or butter beans can be substituted for cannellini beans
- Canned tomatoes can be used in place of fresh
